America is cooking more than ever before as we all practice social distancing and stay indoors as much as possible due to the coronavirus pandemic.
Chef George Duran is sharing his recipe for super simple creamy baked pasta that's made in an Instant Pot and mini lamb meatballs that can be made in an air fryer.

Ingredients:
1 1/2 cup chicken stock
28 ounce can crushed tomatoes
3 Tblsp. olive oil
1 Tblsp. red wine vinegar
2 teaspoons minced garlic
1 tsp. dried oregano
1 tsp. kosher salt
1/2 tsp. black pepper
1/2 cup Fresh basil
8 oz. pasta like penne, ziti, etc.
4 oz. cream cheese
Parmesan cheese for topping
Directions:
Place all ingredients except cream cheese and Parmesan in your Instant Pot and stir well. Cover lid and pressure cook manually on HIGH pressure for 5 minutes. Release pressure and allow to rest for a few minutes before mixing in the cream cheese.
Serve with Parmesan cheese.
Makes 2 servings

Ingredients:
1 lb. ground lamb preferably from New Zealand
3 garlic cloves, finely minced
1 Tblsp. fresh rosemary, finely chopped
1/3 cup of Panko breadcrumbs
1 tsp. ground cumin
1 tsp. kosher salt
1/2 tsp. ground pepper
Directions:
In a large bowl, mix all of the ingredients together until combined. Form mini meatballs, about 1-inch thick, and place them directly in your air fryer. Air fry meatballs at 400 degrees Fahrenheit until fully cooked, about 4 to 5 minutes.
You may also freeze the raw meatballs on a tray and place them in resealable plastic bags for future use.
Serve meatballs with your favorite jarred marinara sauce on top of your favorite pasta.
Makes about 25 to 30 mini meatballs.
