Famous Texas BBQ restaurant dishes recipe for signature meat-stuffed baked potato

As the saying goes, everything's bigger in Texas and one BBQ restaurant has a loaded baked potato that fits the oversized bill.

Sherice and Steve Garner, who opened SouthernQ BBQ and Catering in Houston, Texas, 10 years ago, joined "Good Morning America" to share a recipe from the hometown hot spot's hearty menu.

"Barbecue is not only a way of life, it is also a religion down here. It is a way of gathering family and friends," pitmaster Steve Garner told "GMA."

"It's a lot of home cooking and it's a lot of flavor and love in it," Sherice Garner added.

Due to COVID-19 dining restrictions the business lost most of its catering operations and had to close their original location.

"That meant a lot to us. That was our first building," Sherice Garner explained.

For the past few weeks, the Garners have continued to help feed their hungry community with curb-side service and now they're sharing the secrets to one of SouthernQ's signature items.

The Big Poppa Potato

Ingredients
Dry Rub:
Salt and pepper
1/2 cup Garlic
1 cup Paprika
Sugar
Beef Brisket
Ribs
Sausage
Large baked potato
4 oz butter
1 cup mild cheddar cheese 4 oz sour cream Bacon
Chives
BBQ sauce

Prepare the dry rub for beef brisket. In a small bowl mix 1 teaspoon of salt, 1 teaspoon pepper, half a cup garlic, 1 cup paprika. Generously rub dry mixture on the brisket. Marinade overnight (12 hours), place on the smoker for 18 hours.

Prepare the dry rub for the ribs. In a small bowl mix 1 teaspoon of salt, 1 teaspoon pepper, half a cup garlic, 1 cup paprika and half a cup of sugar. Generously rub dry mixture on the ribs. Marinade overnight (12 hours), place on the smoker for 8 hours.

Smoke homemade sausage for 4 hours.

To prepare the baked potato preheat the oven to 400 degrees. Wash the potato, then wrap in foil. Baked the potato at 400 degrees for 1 hour or until completely soft.

Slice hot potato open, apply 2 scoops of butter, 1 cup of cheese. Add meats, half a pound of chopped beef brisket on one side, half a pound of sliced sausage, and 1 large rib. Top with BBQ sauce and add sour cream, bacon and chives.
