Easy meals to make this winter in under 20 minutes

With many people exhausting their cookbooks after spending a year cooking at home, one food blogger is providing an array of easy recipes to quickly get dinner on the table and combat kitchen fatigue.

Food blogger Tiffy Chen has shared her passion for food, travel and cooking on social media as she kicked off 2021 with 21 new recipes to cook in under 20 minutes.

From poultry and seafood to vegetable and noodle dishes, Chen's fast and affordable meals will satisfy any craving in less time than it takes to get takeout.

Ingredients
1 1/2 pounds of beef (Any tender cut you like, sirloin, New York, rib-eye)
2 1/2 cups of broccoli
1 egg white
1 tsp of baking soda
3 tbsp of corn starch
5 cloves of garlic minced
2 tbsp of oyster sauce
2 tbsp of soy sauce
1 tbsp of dark soy sauce
1/2 - 1 tbsp of black pepper (depend on how “spicy” you like it”
2 1/2 tbsp of sugar
1/2 tbsp of rice vinegar

Directions
Thinly slice up the beef based on the above tips and marinate the beef with 1 egg white, 1 teaspoon of baking soda, and 1.5 tablespoons of corn starch. Let it rest for five minutes while you prepare the rest of the ingredients.
Mix soy sauce, oyster sauce, sugar, rice vinegar, black pepper, garlic and dark soy sauce until sugar is dissolved. Mix 1.5 tablespoons of corn starch with 3 tablespoons of water and pour it into the sauce, whisk till everything is combined.
Drizzle hot water all over the broccoli and set aside
In a pan, add oil and turn the heat up to medium-high. Once the pan is hot, add in the beef and set it for 30 seconds without moving it. Next, sauté the meat for 2 to 3 minutes
Add in the broccoli and sauté together for 2 to 3 minutes.
Pour in the sauce and cook on high heat for 1 to 2 minutes.

Spicy Korean ramen

Ingredients
1 tbsp of Korean red chili paste
5 cloves of garlic (minced)
1 tbsp of soy sauce
1 tbsp of sugar
2 tsp of Korean red chili flakes
1 tsp of black pepper
1 pack of silken tofu
3 tbsp of chopped kimchi
4 cups of vegetable stock
1 package of ramen noodles
1 egg

Directions

To make the spicy garlic paste in a bowl, mix Korean red chili paste, soy sauce, sugar, Korean red chili flakes, black pepper, and minced garlic.
In a pot, add chopped kimchi, spicy garlic paste and 4 cups of vegetable stock. Turn the heat up to medium-high and bring it to a simmer.
Add in 1 pack of ramen noodles and cook for 2 minutes.
Add in silken tofu and cook for another 2 to 3 minutes.
Optional, but highly recommend crack an egg and garnish with green onion.

Creamy bacon miso udon noodles

This dish is similar to the creamy, salty and savory Italian favorite carbonara, but with an Asian influence and twist.

Ingredients
1/2 cup of Parmesan cheese
2 egg yolk
1/2 tbsp of miso paste
3 tbsp of heavy cream or milk
1 tsp of black pepper
4 thin slices of bacon
2 packs of frozen udon

Directions
Prepare the udon noodles.
Slice up the bacon and pan fry till crispy.
In a large bowl, add Parmesan cheese, egg yolk, miso paste, heavy cream, black pepper, crispy bacon, 3 tablespoons of hot pasta water, and mix till everything is combined.
Add in drained udon and mix till udon is coated in the sauce. Add more paste water to desire consistency. Garnish with green onion.

Spicy honey garlic chicken tenders

Ingredients
1 pound of chicken tenders
1 tsp of salt
1 tsp of pepper
2 tsp of garlic powder
6 tbsp of corn starch
1 egg
6 cloves of garlic (minced)
1 1/2 tbsp of Korean chili paste
1 1/2 tbsp of soy sauce
2 1/2 tbsp of honey
1 1/2 tbsp of butter
1 tbsp of sesame seeds

Directions
Marinate the chicken tenders in salt, pepper, garlic powder, 2 tablespoons of corn starch, and one egg.
Once everything is combined, coat the chicken in 4 tablespoons of corn starch until all the chicken is fully covered.
In a pan, add oil and turn the heat up to medium-high. Once the oil is hot, add in the chicken tender and pan fry for 2 to 3 minutes on each side. Remove and set aside once the chicken is golden brown and crispy.
In a new pan, add Korean chili paste, honey, soy sauce and butter. Turn the heat up to medium-high and mix for 30 seconds or until everything is combined.
Add in minced garlic and let it simmer for another 30 seconds before adding in the chicken.
Toss on high heat for 1 minute, making sure all the chicken is coated in the glaze.
Garnish with sesame seeds and green onion

Thai steamed fish with ginger and lime

Ingredients
10 cloves of garlic (minced)
6 tbsp of fresh lime juice
3-4 Thai chili (chopped)
8 stalks of cilantro (chopped)
1/4 cup of chicken stock
3 tbsp of sugar
3 tbsp of fish sauce
2 piece of white fish

Directions

Steam the fish for 10 minutes or until fully cooked.
In a bowl, mix warm chicken stock and sugar until sugar is fully dissolved.
Add in minced garlic, chopped cilantro, chopped Thai chili, and fish sauce.
Once the fish is fully steamed, transfer the fish to another serving plate.
Drizzle the fish all over the fish and enjoy!
